INGREDIENTS:
1 pound ground beef (cook & drain)
1/2 cup chopped onion
1/2 cup chopped bell pepper
2 cups water
1 cup white rice
1 Tablespoon of chili powder (more or less)
salt, pepper and any other spices
you like-- to taste
1 can whole kernel corn (drained & rinsed)
1 can kidney beans (drained & rinsed)
1 can petites diced tomatoes (with juice)
TOPPING: 1/2 cup shredded cheese (or more if you like)
DIRECTIONS: Add all ingredients to skillet (except cheese) – cook covered for about 25 minutes or until rice is done. Top with cheese & Serve.
