Pasta Fagioli Soup

Pasta Fagioli Soup Ingredients:

1 pound ground italian sausage (ground beef or ground turkey can be options)

1 cup diced carrots

1 cup diced celery

1 1/2 cups chopped onion

1 Tablespoon minced garlic 3

cans tomato sauce (8 ounces each)

2 1/2 cups chicken broth

1/2 cup water

1 can diced tomatoes (15 ounces)

spices (about a teaspoon each +/-) salt, pepper, thyme, basil, oregano

2 cups dry ditalini pasta (cooked separately according to package instructions)

1 can dark red kidney beans -drained & rinsed

1 can great northern beans -drained & rinsed

(optional top with shredded parmesan)

2 Tablespoons olive oil

DIRECTIONS: cook & drain meat add olive oil & saute’ veggies with garlic add all other ingredients – cook 20 minutes or until celery and carrots are tender. serve soup over the pasta. You can mix it all into one pot- the pasta will continue to get soggy the longer it sits, so I recommend cooking then separately and adding them together just before serving.
