Ingredients:
2 cups all purpose flour
2 cups sugar
1 ½ cups cooking oil (veg or canola)
4 eggs 2 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
1 cup chopped pecans
3 cups grated carrots
1 teaspoon vanilla
Directions: Sift together dry ingredients. Add eggs, oil, vanilla, and beat well. Add pecans and carrots. Bake in 3 cake pans (for 3 layers) that have been greased and floured. 350 degrees fahrenheit for 30-35 minutes Icing ingredients: 1 package cream cheese (8 ounces) 1 box powdered sugar 2 teaspoons vanilla ½ stick butter (1 teaspoon milk – if needed) Mix all together and spread on cooled cake.
